Esther Hill, PhD, Reflections from a Researcher
I am the lead scientist and researcher for Healthy Dining. My professional background has been quite a journey. I started out as a physics student, then progressed to bioradiology, then received a PhD in biomathematics. I worked in physiology and medical research for almost 20 years. Then, I met Anita Jones and together we founded the Healthy Dining Program back in 1990. I love my position at Healthy Dining because it enables me to apply my science and research background to helping Americans to eat healthier – especially when they are eating away from home. My blogs will update you on current nutrition and lifestyle research and how you can apply credible research to enhance your health and well-being. As a registered dietitian and a working mom with a new baby in the house, I know how hard it is to eat healthy with a busy schedule and a minimal amount of time. Nowadays, even more than ever, I would prefer to spend my time with my little one instead of slaving over a hot stove all night. Needless to say dining out is extremely helpful for me and my family.
